Can anyone tell me how I make a piece of footage freezeframe, either in the middle of a clip or at the end of a clip.

Doing this for the video would be trivial -- you can go to the timeline, position the jog bar one frame from the beginning or end, cut the video, and then change the playback speed of the 1-frame video. Another way to do this would be to save the frame as a still image, and insert it into the timeline with the desired duration.
The bigger problem will likely be the audio. If you aren't using an audio track that is separate from the video, you may want to back up a few seconds from the end of the video, use that as your final video frame, and let the audio continue for the duration of the still frame.
