My PC is not a powerfull one, so i set the sampling quality to 85%, it's going a lot faster when i read it on my timelime than if i encode image in AVI format.
What do you think ?

I want to make a DVD and i wonder if this settings will do a good image ?

Use a higher video rate .. 4.000 and up.
And use the best quality possible , no matters your pc runs slow. it is better to wait than having a poor quality result.
I like a lot CBR over VBR .. it keeps the quality untouched, unless you want to save few MB keeping the quality acceptable (VBR) and CBR uses less cpu coz less calculations are done.
