Shapes - a years old problem and errors

Maybe I am missing something, even something huge here...

quite a few errors tonight messing about with shapes... having to create a round logo with text applied to one shape path and add another almost matching shape to make that the right size and the text to be in the middle of it. This is all on the outer perimeter. The path the text is applied to, is then edited to have the width colour only and then the width is set to 0 to make it disappear when i am happy.

It dawns on me this is all a bit backward that I should be able to add and manipulate text to the shape itself without another shape as a guide. But I can't see beyond pressing enter to make a new line of text inside the shape and the ability to have text going >>> that way, or downwards.

Is it possible to draw a ring shape, add text and even move the text higher or lower than the ring, even reverse the text to it says
LEFT for example at the top arc and RIGHT for example at the bottom arc (of the ring) and the text still be the correct way ie not upsidedown at the bottom ?

I realise I am doing this probably a stupid way and there is a method to this. ALSO

When I create a shape, I am struggling to be able to edit it later. I am finding I have to create a new shape on the same layer, then right click edit and sometimes it flashes up and disappears repeatedly until it decides to stay, a behaviour I saw back on psp 9 (jasc).

Thank you for that. Any idea how I change the direction of the text at the bottom so it isn't backwards ? When I add the top text it is perfectly correct but I do not know how to add the bottom without it basically being a continued rotation of the top text ergo it is naturally backwards as it rotates round.
