Hi all,
I'm buggered if I can correct this!
Does anyone know how I can put back my Text to 'solid'?
I must have done something to make it 'Hollow'.
I don't know enough of the terminology to know what setting I'm looking for; Is it in Materials?

Yes, the Materials palette. Try making the foreground and background colour the same. The foreground colour is the outline/stroke colour, the background colour is the font/fill colour.

BTW, how do I make it fixed as in if I change the colour of the text (foreground), make that colour the same as the (background)?
At the moment (now that I know how to change it), I have to manually change the 'lower right' square to the same as the 'top left' square

Foreground and background aren't linked, and I don't believe we can link them to always match. One option is to not use a stroke at all. Set the foreground to transparent or setting the width of the stroke to 0. Then you only need to change the background color for a constant solid color.
Another option is a quick color selection feature that lets you sample colors directly from anywhere on the screen. Hover over the background or foreground color with your mouse and then hold the ctrl key, the icon will change to an eyedropper. Then click on the color (just the other rectangle) and they'll quickly match.
Final option I can recommend is scripts. Here is a zip folder of two simple scripts that are set to copy the material from foreground to background or background to foreground. Unzip them into your Scripts-Restricted folder. C:\users\YourUserName\Documents\Corel PaintShop Pro\YOUR VERSION\Scripts-Restricted
Run them from the script toolbar. If you like this option they can also be bound to shortcut keys to make running them faster.

I'm very much a newbie to Corel.
When you say 'stroke', I only want to use the T for text. So if I have a photo I want to make some annotations on, i just want to either put some text to an object and/or use the 'brush' to draw some arrows pointing to the object.
So when you say 'stroke', I'm thinking of a brush stroke.
For some reason, stupidly, ages ago, I ended up with a Text which was hollow. After spending hours Thinning, borders and so on, I just had to ask for help
Surely, I should use the T for text, or am I making a newbie mistake?

Forriner and Jean-Luc both already defined the outline of your text as the "Stroke" so I assumed you were aware that's what I was referring to. When I say stroke I'm referring to the outline of the text because that's what it's called. Text, like all vector objects, has a stroke color (outline color) and a fill color. The outline/stroke is defined by three properties: Line Style, Stroke Width, and Stroke Color. The Stroke Color is defined by the Foreground swatch on the Materials palette.
You asked how to keep the Foreground (Stroke Color) and Background (Fill color) in sync because when you change your background(Fill) color the foreground (Stroke) doesn't change automatically. There is no option for this. So I gave you three possible ways to get the effect you want.
1) Turn off the Stroke/outline by setting the Stroke Width to 0. This is the easiest. If there is no stroke, you only have to change the background (fill) color. You never have to worry about the foreground.
If, however, you want to have an outline that you can control to make the letter fatter or thinner I also provided the next two options.
2) You can use the Screen Sampling option to quickly set the foreground color to match the background color by sampling it directly from the screen.

3) Use the scripts I gave you to match force the foreground or background colors to match when the script is run.

I find it quite easy to use the mouse right and left click on the standard palette
Right click for Fill and Left for Stroke
I noticed that LeviFiction used the mouse click to change the colours in the Video, very useful demo.
