Fed up with DVD-R, DVD+r, etc.

What is the "right" type of DVD to use when making DVDs for general use in home (non computer) DVD players? DVD-R or DVD+R???? And what are the rules for including extra content? I tried adding COPYRGHT.TXT to the root and it failed on 2 DVD players which played OK without that! Same with adding any extra folders beyond VIDEO_TS and AUDIO_TS. I searched around o the web and found lots of info, some conflicting and some very old... argh!
