Changing Mark In and Mark Out points possible?

I create projects on Avid Xpress Pro, export as a QuickTime file, use ProCoder to compress and encode to an MPEG 2 file and then use Ulead DVD Workshop 2 (to which I am new) to author to DVD. My problem is this:

The original project has a head (colour bars etc) and a long tail (black) which I wish to remove as late as possible before burning to DVD. I would like to insert Mark In and Mark Out points in DVD Workshop so as to exclude the head and tail and burn ONLY the body of the project in between. In the DVD Workshop Edit Tab, Mark In shows as 0:00:00 and Mark Out shows the reading for the end of the Project.
How can I alter these values so as to burn ONLY between them? I've searched high and low but no joy. If this is not possible, what is the best/correct way of excluding the head and tail from the burn?

I am not familiar with Avid and Quick time files but it seems to me that you are taking the long way for no reason since it will be twice that you encode the files before the DVD is done:
Once from Quick Time to mpeg
second time after you edit the file in WS.(I think WS encodes it)
Why don't you remove the unwanted video in Avid,encode directly to MPEG and later add to WS?

In Edit, just click onto the end of the clip in the progress bar under the preview and drag it to where you want it.

Make sure under video and audio tabs that the boxes forcing a re-encode are unchecked (if they are checked and greyed out, it means your imported MPEG-2 does not conform to DVD standards).
