I have been adding some text to an image and it appears ok when I'm typing, but once I deselect the text it changes to be just a dotted outline.
I've been successfully creating text most of the morning, don't believe I've changed anything that would make this occur, but . . .
I've attached an image with screengrabs showing "as I'm typing" and after what's left after deselecting: you can just about make out the outline in the lower part of the image (I zoomed in on the lower example, to try and allow the text to be seen).
After new text deselected, only outline visible.

Where it says Create as , change from Selection to Vector.
Wherever you have just a tool malfunctioning or not doing what you expect of it , reset that tool to its default. This Reset to Default is found for most tools to the right of the drop down Presets dialog.

And thanks for the reset tip - that's what I'll try first, if anything is not reacting as I expect.
