Should projects always use HTML5?

I share most of my videos on facebook, youtube, etc. Should I always start a project selecting Html5? And what would be the problem if I don't? Or for that matter, what would be the problem if I did?

Html5 is a particular kind project. if you don't know what it's good for so you better not need to used it.

Use the format most suitable for the final use the video will get - no good using HTML5 if the device you use for display in your tutorials cannot play it

you need to experiment - which format gives the best quality on the devices it will be played on
