Tanquen - PSP 2018 now includes what is known as the "Essentials" workspace. This is meant to be easier to use for new users as it simplifies a lot of the UI. To get all of your options back you need to switch over to the Complete workspace.
Simply go to File -> Workspace -> Complete
As for the shortcut (Alt + F + A), technically they didn't change it. They just didn't properly consider what adding Add Info with an "A" shortcut would do. So PSP will use the last added menu item that was added for that letter to determine which command should be run. And unfortunately they added "Add Info" with the "A" underlined so that's what PSP runs. But "Save As" also has its "A" underlined so that's the reason for the discrepancy. They weren't thinking about it properly. I think many people no longer user menu hotkeys anyway, so that might be the reason they didn't think it through. Instead, they use command shortcut keys. LIke SaveAs is F12. And Save is Ctrl + S. The use of Alt, release, then F for File, then release, then A for "Save As" to select the command is kind of falling out of favor with some users.
But you can change these with the Customize command. I made a similar video for iraisok here on the forums not too long ago.
