I cannot find the undo button in 2018 Ultimate.

It's the one highlighted here, 8th from the left.
It's possible you've removed it, in which case you need to put it back, by right clicking in the title bar some where, selecting 'Customize...' and dragging it in to the place where it goes.

Only have 2 lines of options, top one is from file to user interface.2nd line is from presets to fit image + window to screen. R/Clicking everywhere brings up a custom box, only choices under options is to alter size of icons

Ken -- it sounds to me you are in the Essentials Workspace. That does not have those icons shown in the image above, and the Customize menu is limited as you describe. Right click anywhere on screen and in the menu which appears choose Workspace > Complete. That will bring up both the Undo and Redo buttons and if they are still not there, then the Customize menu is the detailed one shown above.
In the Essentials Workspace, you have to Undo by either the Edit menu or the keystroke shortcuts shown, Ctrl+Z being the wider Windows one.

Thank you gentlemen for your replies , I was in the edit workspace and r/clicking- workspace-complete got me back to where everything should be including the organiiser, materials palette and learning centre views .Also the dark background returned. Appreciate your help

I've seen this issue so many times it's disheartening. Corel made a big mistake by making the Essentials workspace the default workspace. I keep posting that in the likely vain hope that - in some thread - some Corel person might see it and maybe they'll change that ridiculous decision.

I don't think Corel made a big mistake. I think the "thing" is not explained as it should... Communication should be improved.
It seems Corel received many complaints about the "complexity" of the program for first time users. "Too difficult", "How to do ?", "I don't need so many stuff", "Far too complicate"...
If you want to attract new users, you need to make the first impression a good experience. Myself was voting for different skins and for readymade workspaces we can choice. I observe now that the problem is coming from "regular" users and not from new users. Old habit is difficult to change... :>)
