I don't see the problem. Both the time and date are shown immediately you point at a clip in the library. Editing is a process of putting the clips in an order which makes a good final video. This does not always mean string the clips by time and date but by selecting the appropriate clip for that moment in the video. For example a clip from another shooting session could be used as a cut away or filler. Example: you cannot show your flight taking off from your airport if you are sitting in the aeroplane, so you would use a previous or later shoot to supply that clip.
Two further examples:
I recorded a trip we took on the Welsh Highland Railway. The first day was all in the train, hanging out of windows and station shots in the journey. A second day was taken chasing the train up the track (by road) taking passing shots and scenery.
Recorded my Grandchildren Go-Karting at a local track, they liked it so much we returned for a second go. Clothing and weather (standard Welsh cloudy) the same so it was impossible to tell between the first and second outing in the final video.
