Optimal Hard Drive Configuration for Video Editing

I've used the same PC to do video editing for 8 years now and I'm now getting some crashes as well as poor performance. This PC has done its job so I'm considering an upgrade to a new laptop or desktop for video editing. I don't know if this is even doable from a laptop perspective or whether the question I'm asking is even worthwhile anymore since I know Solid State drives have increased the bar on read / write speeds for drives, but an answer will help move me in the right direction.

First, from strictly a desktop perspective, what is the optimal hard drive configuration? I was thinking it probably makes sense to have 3 decent sized Solid-state drives, maybe 250 or 500 Gigs per drive: 1: for OS and apps, 2: for source files, 3: for output. Does this make the most sense?

Secondly, from a laptop perspective, and just general performance perspective I guess, I am overthinking this nowadays? Has Solid-state drives come so far that splitting up drives for separate tasks like this still make sense or does just having a good single Solid-state drive inside the laptop for all tasks give you more than good enough performance?

Hi, what type of editing you do? 8 years in video is "ages.."
for the price of a laptop you can get much better desktop system.

Well, currently I stitch together content from a number of different devices (drones, GoPro, iPhones, etc.) for family videos. I'm often employing different effects like Mercalli, and the like, to optimize video quality. However, this is only what I do now. I look forward to having a computer that will allow me to explore what other improvement possibilities might exist within video editing and thus why I thought this question might be a good one to ask.
