Types of Video to burn to make a DVD in VS8

I am new to DVD burning but not VS8. I have video I would like to burn to DVD's using VS8 but I'm having a problem. I went and set up a project of a few files that equaled only an hour and six minutes. I have discs that say they are 4.7 gig and hold 2 hours (Maxell DVD-R). When I went through everything in VS8, it said that the video equaled to 4.6 but only 4.4 was available on the DVD.

When I record video, what properties should I have in order to fit two hours on disc? You need MPEG's for the best quality, right?

I record usually from my WinFast TV Tuner from tape or direct from the TV.

My settings currently in WinFast are:

MPEG1 Codec
320 x 240 NTSC
29.97 fps
Video Quality - 500
Target Data Rate 1000
Audio Codec - MPEG 1 Audio Layer II

If I need to convert video in VS8 before I burn it, what settings should I use?

I'm sorry if this has already been answered, but I didn't see any questioned that looked quite like this.

I use MPEG-2 files for DVDs. It looks like you are capturing your source video to MPEG-1 which does not have good resolution.
Re-rendering to MPEG-2 from MPEG-1 won't improve your video.
I'm not sure about the capture hardware that you have but if it has a way to capture to AVI or MPEG-2 set it for that then you will have something good to work with in Video Studio.

Thank you for the links, I will look into them.

I tried recording in M-PEG 2 but I got a colored bar on the bottom of my video. Is M-PEG 2 more compressed? And I didn't realize I should also try AVI, so thanks for that suggestion too.
