Using the "Quote" facility
Have never used this.Do you just highlight the text in a post and click on quote when you want to refer previous text in a post ?

There are a couple of ways of going about this. One is the way Trevor just suggested. That will copy the entire post you want to quote from, but will automatically include who said it i.e. the "Ken Veal said" part. It's fine if the question is as short as yours was that Trevor "quoted". However, if you only want to quote a line or two from a much longer post, you must then delete the parts of the Quote you don't want.
I usually opt for another way. I in fact select and copy the text I want. Then in my reply I hit the Quote button above the 'Post a Reply' box (to the right of the B, I and U buttons). You will see [quote][/quote] appear. You position the cursor between the ][ brackets and paste in the text you want to appear. You don't automatically get the "Ken Veal said" bit, but often this does not matter if your post with the Quote is immediately following that post or very close to it.
However, it you want it, it's easy enough. You go back to the [quote] part and add an = symbol, followed by the name of the person who said it in quotation marks: [quote="Ken Veal"].
Some might find this a bit more labour intensive, but I find it takes about as long as it would to use Trevor's method then go through the text deleting the bits you don't want.
Up to you, really...

A few observations on this issue-
1 Trevor’s suggestion is fine if you need to quote the whole text , this method also supplies the author’s name.
2 So far when using this forum I have only had occasion to quote a a small selection from a previous post and because I have not figured out how to show a quote as discussed here I have used quotation marks.
3 Which brings me to the fact that before this post I did look for anything on using the quote button including “Please read this before posting” but could not find anything on it .Not a big issue, but I thought it would be somewhere.
4 I think I would lean towards the select and copy method which I tried as follows

As you where, the big text box does not show around the text until it has been posted

As I said above, the name of the person you are quoting has to itself be in quotation marks "..." i.e. apostrophes.Ken Berry wrote:... followed by the name of the person who said it in quotation marks:....
