I want to change an existing color picture as follows
=> one object must remain in color
=> the rest of the picture is black and white
I selected the object in a separate picture - then i turned put the rest of the picture in black and white
If I want to put the object in the gray picture => the color of the object changes in black and white.
How to do it right? Please in detail - I'm not a specialist!
I use Paint Shop Pro X8

When you convert your image to a Greyscale (Black and White) image it removes all color and converts the image to a greyscale only image. So only grey is allowed to exist in that image.
You can fix this by going to
Image -> Increase Color Depth -> RGB 8-bit
Or
Use a different effect to convert to black and white.
Effects -> Photo Effects -> Black & White Film
Use that effect to convert to Black and White. It offers more control over the colors, and your image will remain a full color depth image. This will let you copy the colored object in without converting it to black and white.

Here's how I would approach it.
Open your photo. Then Layers/Duplicate.
Then on the right hand side of your screen make sure you have the top layer selected.
Go to Adjust/Hue and Saturation. Select Hue/Saturation/Lightness. Lefthand slider down to -100. (You could turn the top layer into a black and white numerous ways).
Select Eraser Tool and adjust size and other options.
Erase the areas that you want as coloured.
Yes there are many many ways of getting a similar result. This is just one way.
