Trying to capture (and/or use) 2 audio channels?

New camera coming on wednesday, Sony NX30 and it has built in 2 XLR audio inputs. I tried this a while ago but never figured it out. I use 2 mics for my weddings, one onboard shotgun and one lav on the groom. I was hoping to be able to simply let the 2 channels run, then edit in post. I was doing this on the fly and it was difficult at times, and now looks even more difficult due to the location of the volume knobs. The grooms lav mic picks up everything, from clearing throat, etc. I was hoping I could "see" both audio channels in VS and simply be able to bring in the volume during vows and rings. Is this possible? I am thinking I would need to somehow see 2 audio tracks, one from each mic?

I think it's beyond the scope of this software. I wonder do other in it's class do show.
The waveform you see is just a combinations of the 2 channels.

I would do audio editing in an audio editor, not sure how well audacity would do with this, but as it's free it's worth checking out.
