I am getting exactly what lata has posted. Again, it is just a matter of trying to watch the preview, as the final captured AVI file plays fine.
Since I am new to VS (I have VS7 Ultimate), I thought this was an issue. I have not had the problem with other capture/video editing programs. (I have previously used Studio and PowerDirector). Just means I have to watch the capture on the small camcorder screen, if I want to do so. It would be nice to watch on the larger computer screen.
I have several dozens of Hi8 and Digital8 tapes I am transferring over to the computer.

Afraid not, as there are too many variables.
I have no trouble capturing and watching a perfectly smooth preview.
At this very moment I have a vhs tape going through a canopus advc box and into VS X7, while I'm editing another movie in my preferred Edius editing app.

I have an Intel i7 quad core processor and 6GB memory with 6TB of fast storage.
The jumpiness occurs even without capturing, just watching a video coming into the computer while playing on the camcorder via firewire.
I guess that since the actual captured file is perfect, there is nothing to really worry about?

I don't have quite such a powerful system, but nearly do, and mine works perfectly, so VS has the right mechanics to work properly. Although we know of a few people who have this problem, there are many VS users who don't, or we'd have thousands of people on the forum complaining.
It's a tough one, but it could be a conflict with programmes, only way to tell if this is so is to totally reinstall a fresh copy of windows and just add VS.
If it works great, you can then add your other programmes one by one and test to see what causes the problem. It may not even re-manifest itself, as the different order of installation can have a drastic effect.
If not it's a hardware compatibility problem, so then you can swap around hardware items to see what it might be.
Or, the option I would take, have a glass of wine or pint of beer and ignore it, at least this way you have a nice drink and can edit the movies you have not been able to watch being captured in real time

One thing I though of, was are you using a front mounted firewire port? These often aren't connected directly, so it is always best to use rear mounted ones!
