Is it possible to use a custom format on a H264 coding setting? Somehow?

I'm not totally sure what you mean, but if you mean can you customise the properties of a video using the h.264 codec, then yes. With your project in the timeline, select Share > Create Video File > Custom. Then in the dialogue box which appears, select MPEG Transport Stream (*.m2t) as the 'Save As Type. Then click the Options button and select the Compression tab. Change the format to AVCHD and tick the AVCHD box below that. Then change any of the other properties you want to change and OK out. Give the new file a name, then OK out of that box too.

You can also do the same with Settings > Make Movie Template Manager if you intend to make a lot of videos with the same properties.
