I have read and read read the knowledge base, learning centre etc. It gives advice on things far more complex than my need, but doesn't help me.
All I need to do, is resize / crop an image to a specific number of pixels (to upload to the CMS of our website). I could do this in Photoshop, and on Pixlr, but not here!
I have tried 'specify print size' and entering pixel dimensions of 250x250, but that does not work. It crops to that ratio, but when I look at canvas size it is still huuuge!
What am I missing?

The resize dialogue has three sections: Print Size, below it Pixel Dimensions, and below that a checkbox for Advanced Settings.
You need the second, Pixel Dimensions. To the right there is a drop down menu, for either Pixels or Percent. Make sure that's Pixels if you want to change pixel dimensions.
If necessary, click to check Advanced settings and make sure Lock aspect ratio is checked if you want.
The Crop tool options palette (F4) had a drop down menu selection for Pixels or centimeters or inches. Make sure Specify Print size isn't checked if you want to enter Pixels in the width and height boxes.

If you want to end up with a square image of 250 x 250 pixels, first crop the original using the "square" preset. Once you have it looking the way you want it, select Image/resize, select a resolution of 72 pixels per inch, then enter a width of height of 250 in Pixel dimensions. The pixels per inch is important in how the image appears on screen.
