I heard somewhere that too many choices can prevent action. I am looking into the rendering process and I see so many options that my head is spinning. I am not sure what they mean and in the help file, it does not explain much at all.
Is there a place where it explains all those DV, HDV, AVCHD, etc. I just want the option to have a video I will be able to save on my S3 and embed in my site. Which option do I need?

I have no idea what format the S3 uses but have you looked in "Share >> Export to Mobile Device" to see if there is a format there that matches the requirement for your S3.
Similarly with the embed in your site - what options do you have - how does your website accept videos - for my website I upload my videos as mpeg-4 to a video hosting site who then provide an HTML embed code which I embed in my website - what do you normally do to load videos to your website.

I think the other videos on my site are mp4 so I can go with mpeg4 (unless it is a different thing).
My current project has 720x480 format. In the mpeg4 I don't see that option. Any recommendation?

Use WMV. WMV-HD (1920x1080) and (1280x720) files play nicely on my Samsung Galaxy S2 phone.

to obtain 720 x 480 MPEG-4 (MP4) output.
Go to "Share >> Create video File >> Custom" when the 'Create video file' window opens down towards the bottom change the 'save as type' drop down to "MPEG-4 (*.mp4, *.m4v)" - then click on the 'options' button towards the bottom right corner and in the new dialogue window which opens under the 'General' tab select the 720 x 480 option.
click OK - back to create video file window - at top select save folder to save to - at bottom name the new file - click 'Save' - video creates.
