When I'm working on a project, I sometimes create bits of artwork that I may or may not want to use in the piece. However, when I move the items off the canvas, they pretty much disappear. Is there any way to store items "off canvas" and have them visible for quick selection?
One option, I guess, is to make the whole Edit preview area the canvas and only crop the item to final size when I'm done, but that seems wonky.
Any suggestions would be very welcome!

Place them on their own layer, and hide the layer. This way it's not visible, out of the way, and you can minipulate the individual pieces separately.

Why not put them on their own layer(s)?
You can hide the layer(s), and later copy items from their own layer into your "real" layers, etc.

HIding the layer would also be my first suggestion. However, if you want to move them OUT of the canvas area, they are not really gone. But since you cannot GRAB it with the move tool, you need to use a little trick: hold the SHIFT key with the move tool and you will be able to grab the whole layer and bring back the object that might be "out of sight".
But using a layer and hiding it would surely be the most efficient way to go.

There's also a "Center Layer" script available inside PSP. If you bound that to a short-cut key you could just press the shortcut the center the entire layer back onto the canvas.

Thanks everyone, I'll give the layer idea a try...
