Whenever I add text or music when I finish editing and publish it,the text and music is about 3 seconds earlier than I originally set it to come in.

Have you added the text and music after you have finished all other editing? If you add the text/music, then add transitions, this will reduce the overall length of the video and could account for what you are seeing...
