When I am editing a photo, how do I access both the change and the old in two panes on the screen?

One way:
Right click the image and choose: Copy.
Then Right click on the workspace and Choose : Paste as New Image.
You can then move your images to be beside each other and work on one and compare results with the other.

There is actually a command just for the purpose of creating a new duplicate image.
Window -> Duplicate (Shift + D)
It copies the current image in its entirety and creates a new image with all of the same stuff, layers and all.
To see them side by side then, you need to turn off Tabbed Documents. That command is also under the "Window" menu.
You can also use the "New Window" option under the "Window" menu but that doesn't do much else other than create a new window for the exact same image. Which means what you do in one window happens in the other window making it kind of useless for this sort of thing. In fact I'm not sure what use it has other than with brushes. The result of using a brush won't appear on the second window until after you've confirmed the change in the first window.
