If you look immediately under the preview screen where you are renaming the chapters you will see a small 'drop down' - use that to select the rest of the pages in your menu.

Hi

After selecting the first chapter page as mentioned by Brian, use the controls below the words "Currently displayed menu" to navigate to the next page.

Using X5
When you close the module you are returned to the edit timelines, you should now save the project file "Save or Save As"
This will save the menu details, available when you next do Share create Disc.

Important using X4, make sure you have updated the program to the latest Service Pack
Otherwise using X4 the chapter names will not be saved, you will have to re-name them again.
Run a test to make sure?

There was a member that created a UFO containing 30 links per menu page, think it was for Text Menu, but guess you would be best using that with 30.
