files, files and more files

I'm producing a DVD containing multiple slideshows. It's a work in progress and has been recompiled several times over the last few months. Trouble is, DVD workshop adds a new .ac3 file for each slideshow to its data stucture on every recompilation and leaves the old ones there. So every title folder (and there are about 30 of them) now has half a dozen redundant .ac3 files inside it. There's an opening movie file of about ten seconds duration, this is also getting recompiled and a new .mp4 file added for it each time around.

Can I delete the apparently redundant files without doing any harm? Can I have the programme use the compiled .mp4 and .ac3 files instead of watching it recompile the originals each time? Every time I go for a disc burn the programme spends 3 hours reconverting the original .wav files to mp3 and I'd like to find a way of cutting this step out. Can it be done, and how?

Also also, every time I make a change and hit "save" the programme takes ten minutes to save the project. This seems totally excessive. Any ideas why it's happening?
