Please excuse the ignorance and yes, I did spend considerable time searching for an answer without success. Please just point me to the information.
My input video is from .mov files from a Canon SX-30 IS with these properties:
Video:
Attributes: 24-bit, 1280 x 720
Frame Rate: 29.970 frames/sec
Sound:
Compression: 16-bit, Little Endian
Attributes: 48 KHz, 16-bit, Stereo
I wish to record to DVD disc at same or similar quality but 720 x 480 is the best I can seem to get from VS x 4 Pro "Ultimate".
In:
Settings > Preferences > Performance > Video Save Options > Frame Size
- "User Defined" is not available and the highest resolution in "Standard" is
720 x 480.
Where is the information I need?

If you are wanting to burn a 'normal' video DVD, then you are stuck with the international standards governing such discs. And I am afraid that for NTSC users, the maximum frame size for a DVD is 720 x 480. Nothing you can do about it. And it has nothing to do with Video Studio. All software packages are similarly stuck with the international DVD standard.
You can, however, burning what is called a hybrid or AVCHD disc using your original footage (Share > Create Disc > AVCHD). That produces a Blu-Ray structure on a standard DVD blank disc. However, such discs can only be played on Blu-Ray players rated to play such discs, and not on a standard DVD player.
You could also burn your edited video in its original format to a DVD as data, but again you would then need a Blu-Ray player or PlayStation 3 to be able to recognise and play the video.
