So to share an iphone 4s video, what are the best output settings, to retain the .mov settings, so that there is the least amount of re-encoding, which presumably will be the fastest?

How are you planning to share the video? Upload it on Youtube or any video sharing web site, just share the video file itself or create a DVD or on an optical disc?
If you plan to upload it on Youtube or any sharing sites, you can directly upload it from your iphone, that is if you do not need to edit the video. Everything else, you may convert it to an mpeg or mp4 file via SHARE > CREATE VIDEO FILE
