Is there a way that UVS9 will add, "copy protection" to my DVD, so that it cannot be copied by others?
If so, will this effect the compatability of my DVD's with standard players?

UVS9 doesn't have that ability.
DVD WS 2.0 (Full) has the ability to add copyprotection flags -- but they are intended to be turned "on" by the software, and you will have to send your DVD out on DLT to be "replicated" by a replicator.
You won't be able to just burn them to a DVD±R/RW Disc using a DVD Burner.

As an Artist and one who has tried Copy Protection, Watermarks, Encoding, and other methods, I can tell you if you can Protect it, THEY CAN BREAK IT!
All of my work is protected under US Copyright Protection, I have tons of applications. It really makes little difference if someone wants to steal it. The Music industry is using spy bots, and Trackers placed into the Headers of the Music. Artist are Encoding works of Art with their DNA, the attempts are extreme. In every case someone finds a way to break the Protection Scheme.
What the HELL is wrong with Humanity that I work so hard to create something so beautiful as another Lazy SOB would steal and take credit. AND, some have the audacity to call it Flattery!!
Ulead uses the Digimarc Plug-in as standard for Images, and this feature is not cheap to record your protection efforts. If you have sent a Copy and Registered with the US Gov. you are protected if it comes down to a Law suite, the same for Digimarc.
Otherwise you will have to have the Disc sent to a Company that will Protect the Disc for you and that is very expensive, as they have to duplicate all of the discs for you, because the Disc can not be copied by you.
Basically what you are trying to do is record you work in advance of release to the Public, creating as many legitimate sources as possible to protect your right to sue against copyright infringement. Meaning, using these companies and documents as ample evidence “said” work is your work.

The tools to remove Macrovision and CSS are free! (And, apparently illegal in the USA.)
Besides the license cost, CSS cannot be used on a "burned" DVD do to technical limitations / specifications. This means that it's technically impossible to make an exact bit-for-bit copy of a comercially-stamped CSS-protected DVD... which of course would play just like the original... defeating the whole purpose!

Before December 15, 1999, CSS licensing was administered on an interim basis by Matsushita.
Macrovision licenses its analog anti-recording technology to hardware makers. There is a $30,000 initial charge, with a $15,000 yearly renewal fee. The fees support certification of players to ensure widest compatibility with televisions. There are no royalty charges for player manufacturers. Macrovision charges a royalty to content publishers (approximately 4 to 10 cents per disc, compared to 2 to 5 cents for a VHS tape).

Microsoft uses Macrovision, you can find a Tmp file on the drive every-once-in-awhile.
A little off the subject, friend and classical Guitar player tells me; when I record my tracts I create an overlay. It has a high or low frequency and appears as noise on the disc, but is not heard when played. It contains my name copyright info and is repeated every 30 seconds. Even if they copy it, I got them. No, I am not giving you anymore details than that.

Last year, working with VS8, I discovered that a video I'd created of a family member performing, was copy-protected. I tried to make copies to send to relatives, but Nero wouldn't let me: Copy Protected!
I bet a lot of people would like to know how to do this. So would I. In that circumstance, I had to go back and make a new DVD, which amazingly was NOT copy-protected. So the relatives got their copies.
