I have PI 10, 11, 12SE and X3. I have never found out how to change the Color Mode in the "Color Panel" to Two-Color or Multiple-Color.
Any help on this mystery would be appreciated.

I made a "new blank" image and went to the Path Drawing tool and spiraled into total confusion.

Ok I'm a little confused now, after re-reading the topic title. First here's a screenshot of the color panel, and the fly-out to edit, add, and change the gradients.

You should be seeing some gradients. You can create your own and add them to the color panel. To change the color of a path object, you just click on one of the gradients in the color panel. Below is a link to a short animated tutorial on doing that.
Color Panel Tutorial. Click on the Download link above the folder. It is a zip file that contains a SWF, a JS file and a HTML file. Once you have it downloaded unzip it, and click on the HTML document to view the tutorial.
If that's not what your having problems with, and you just can not access the gradients on the Color Panel, we may have another problem. You must be using an RGB layout, and not a black & white or gray scale.
