video for xbox 360

I believe the xbox 360 supports AVI, WMV, and Mp4. Is there any way possible to convert mpeg2 to either of those formats and keep Dolby 5.1 for audio? I am also interested in compression settings to get a dvd down to about 1 gig. I am currently using VSx2.
