I'm helping with a science project and need to get an average grayscale value from regions of b&w images. The only thing that almost does it is the eyedropper, but that does one pixel at a time. Is this possible?
I'd also like to get a grayscale profile with a stretched "rubber band" but can't find anything like that either.
Does X3 have more?

I know this may not be helpful now for your science project, and apologize for the severe delayed response, however PI does not have that feature. Higher-end programs like CorelDraw Graphics Suite would have.
The closest I've been able to find is using the Histogram Panel. It is accessed through the Windows menu>Panels. With the Histogram panel open, use the Rectangle Selection tool to make a selection across your image. The Histogram will reflect the values across that selection. Of course your image would need to be a 8-bit or 16 bit Greyscale. For PI Black and White images are 1-bit.
After making a selection across the image, in the Histogram Panel, moving the small triangle beneath the chart, will update the Value located in the Statics portion. You'll also notice other information provided in the Histogram such as the total pixels, Percentages, Mean values, Median and Standard Deviation. These are all updated when moving the small rectangle.
I would have provide this info sooner, however it's not something that I use in PI, and admit that I just now discovered it.
