OK, learned colleagues!!
My latest dilemma is that I have to make Quicktime MOV files, which is easily rendered to by selecting this option in the 'Create File' rendering process. However, these files have to be below 500MB, and a 16 second clip is preoducing a massive 1.76 GB!!
I have to maintain the HD aspect of the clips, so how can I produce a small enough file size whilst still maintaining the quality??

You know the old saying "Speed, Quality, Price - Pick Any Two"? Well here's a new one: "Size or Quality - Pick One". Reducing the size (by reducing the bitrate) is going to reduce the quality. By how much is in the eye of the beholder.
