How I can remove disable or delete Date and time from files Ulead VideoStudio 11.

If it is embedded in video captured from an analogue source, you can't without expensive and often ineffectual masking technology. Withe Video Studio, you can only put a solid block of colour in the overlay track and resize it to completely cover the date/time stamp on the video, and make sure it lasts for the entire length of the video. Unsightly. Or you can crop off the entire bottom of the video. This will of course affect the aspect ratio and you would need to a compensatory crop to maintain it all around.
If it's from a Sony digital video camera, you need to find some setting in the camera itself. The Manual should indicate where it is. It is only apparently some Sony models which embed the date/time stamp which Video Studio sees and records. Other brands and Sony models don't do this...

First, can you confirm that the date/time appears not only on the VS screen but also on the final , edited video?
If so, then there is little you can do, except -- as I said above in my edited post, before I saw you had already posted a reply -- with Video Studio you can only use an unsightly colour block over date/time stamp during the whole video, or else crop it out.
But for future videos from the camera, make sure the date/time is turned off in the camera.
Sorry I can't offer a more positive response for your current video.
