Ive been playing around with the encoding settings and was wondering how do i reset the settings?
Also after creating video files. How do i figure out what settings i used to make the file?

That doesn't really answer his question.
To get back to the defaults, you just select one of the templates from the "New" project dialog. You can turn this off from within the dialog, and probably have, so to temporarily enable it just make sure you've no project loaded and go to "File" "New" - the dialog should come up.
You can also enable it permanently, or at least 'til you switch it off again, by pressing {F6} and checking the "Display New dialog box" box.
To ID the settings for a video file, just drop it onto the timeline, right-click and select "properties". You can also get more detailed information from separate bitrate viewing programs.

Also learnt with the many issues i've been having was caused from the "display Aspect Ratio" which was at 4:3
