The following pdf booklet by Adobe is an excellent "Digital Video Primer." Even if you've been working with creating projects for a while there's excellent information for both NTSC and PAL folks. Heck, just the Glossary is worth reading! Another thing I like about this booklet is that it's not trying to shove Adobe products down your throat, although I myself use CS2 8) .
