Is there a way to choose your own images for the thumbnails when creating DVD menues?

If you mean the image that appears in the thumbnail, you have to use a scene from the video that the thumbnail represents. Double click on the thumnail and a small preview screen appears with a slider below it. Drag that to a spot in the video you want to use as the background and click OK.
If however you mean the whole background of the menu (i.e. the imagine behind the thumbnails, then simply browse to the image you want by using the Background Image/Video button on the Menu Edit page...
