I got about 3hours of contant driving thats comes out to 10gigs of Avi video.
I did one of those time lapse videos and it got cut down to 2gigs 10mins of video after creating the Avi video.
Then I added a Title and since I went down this one street during the day I thought about driving the same road at night and Split the video so it fades from day to night time about 10 times with in 30 secs.
Then I created the video and the video has lost quality constantly jerky and the file size jumped up to about 26gigs Avi video!
Whats going on?

AVI is merely a container format, it is not a codec. For example, a DivX file can be AVI but so can a DV file, both of which give very different quality and file sizes.
3 hours of DV quality AVI video should be about 39 gig. If your 3 hours is only 10 gig then you must be using some other codec. (CODEC stands for compression/decompression, it's the algorithm that does the actual squeezing and unsqueezing)
DV is the standard codec for most camcorders, well the miniDV tape based ones anyway.
I would assume your 10 minute video is DV codec, and your 26 gig video is probably uncompressed.

What would be best? That's like asking what car is best. They are all different for different uses. I have a rough old 4x4 which takes me anywhere and everywhere, but it wouldn't make much sense if i lived in the city. However, if i owned a city car here then i couldn't get to all the nice remote spots and I'd cry when i get it scratched.
Here's what you need to do. Make the same video using EVERY codec available, then watch each one and compare differences, and filesizes. Then go back and do it again but choosing all the different bit rates available, and note the difference in quality.
Should only take a couple of days, but once you've done that, you will be a certified codec master, and we will bow reverently in your presence.
