how do I get an image (jpg) of a single frame of video while editing in VideoStudio ver. 11.5?

With the cursor on the frame you want, click Save As Still Image.
In Preferences you can set wether it will be saved as a BMP or JPEG.

In Clip mode-Clip-Save as still image
In project mode -Tools-Save current frame as image
