We all learn by making mistakes. You are right Windows system Restore has no effect on "data files" your vsp is a form of data file.
A good plan for future projects is to save it every so often under a new name.
the easiest method for doing this is to tag a couple of numbers on the end such as
MyBigProject01
MyBigProject02
MyBigProject03
MyBigProject10
etc.
The benefit of doing is is two fold.
1. If a disaster strikes such as a sudden mains electrical failure or as you did inadvertently deleted the file by over writing it - then you can open a previously saved version. You then lose some but not all of your editing.
2. You make further edits to a project and then decide you liked it the way it was before - just go back to the earlier version.
Don't feel too hard about it we wouldn't be human if we didn't make any mistakes. You will also find that when you create that project again you will do so a lot faster. This is because you have already worked out what edits you wish to do to the video.

AFAIK, when you overwrite a file it is overwritten. There's nothing more you can do.
That's why you should save your project as Project1. Make some edits, then save it again as Project1A. Make some more edits and save it as Project1B, etc. That way, if there is a problem you can always go back to a previous version that is a few edits away from the project you lost, rather than starting from scratch.
BTW, I feel your pain.

I think this would call for a restore from backup
Maybe the an option for create backup on save should be an option setting ?
