I'm thinking of moving from VS8 and have the MSP trial version for a few weeks. I'm not sure of its just the trial version but I've made a short test movie and found that the crossfade actually cross-fades from image through black to the next image (even though there's a separate crossfade to black. On VS8 it crossfades across the images (no black). Is that just a test version thing?
Also when saving the test movie I wanted to output to a video file in Mpeg2, but foung only one option to output to mpeg. Is that just because it's a test version?

Make sure clips overlap in timeline
The full version that I'm using does the crossfades correctly. Make sure your clips overlap in the timeline, i.e. occupy the same time for the desired length of the crossfade. If you overlap them first, the Fx dragged to the timeline will be automatically sized to the overlapped time. If you're already doing this, it must be a limitation of the trial version.
RE: MPEG output, my MSP V7 full version came with eight pre-configured MPEG NTSC output formats, five of which are MPEG-2 (counting the DVD format encoding, which is MPEG-2). If you press the "New Document" button on the toolbar, select "MPEG files" as the project type and only see one option, it must be a limitation of the trial version.
I've also created several MPEG Project Templates for myself, mostly to be compatible with DVD Movie Factory's settings so it doesn't have to re-render the MPEG's when cutting a DVD ISO file.
The various options for configuring the MPEG encoder are under the Project Settings=>Edit=>Compression tab.

MSP has two main tracks VA and VB, between them is the FX track. Put your first clip on VA overlap the second clip on VB for how long you want the crossfade. Drag the crossfade or whatever transition you want to the fx trck between the ovelap. There's a arrow to determine from which clip it crossfades. By default it will crossfade from the first clip in the timeline. You can change which way it fades by clicking the arrow. Also by right clicking the transition you can set different options for that transition. The example below gives a 4 second transition.
