Hopefully this will be simple but I am going mad trying to find out.
I can create a DVD with different Chapters so that various parts can be accessed (eg, to see film from a birthday or a day out) but of course once that has played the DVD continues on to play the next chapter automatically. How can I get it so that you can chose an individual title on the DVD, watch that and then get taken back to the menu?
Do I create a project, save it, then start again and save it on the same DVD or do I compile them and save together?
HELP!!!

I think the following article, which is part of Steve's tutorial, From Camcorder to DVD, will provide you with a better understanding of the differences between Chapters and Titles.

The short story is that with a DVD it will always continue to play on from a chapter. However you can select to return to a menu at the end of a "title" clip.

But a very brief explanation of what you need to do is to look in the middle of the three icons in the bottom left of the burning screen. It is a cogwheel icon. And when you click on it, then down the bottom of the new page, by default you should see the box beside "Auto repeat when disc playback ends" is ticked. If you untick it, then the box beneath it becomes active, and there you can choose to either continue to play the next clip after one has finished, or ... tah dah! ... go Back to the Menu!

Thanks - but I am still a touch confused.
Do I create a project, do all editing etc then burn to disc then do the same again and burn the second, third etc projects to the same disc. OR, mark different parts as Chapters and use the feature detailed above to stop it playing whole disc afterwards.
How will this differ for thumbnails too?

I think it would benefit you to read that tutorial a linked (blue underlined text) to above, From Camcorder to DVD.
The only type of DVD that you can add to, is called a Data DVD. What you are working on is a Video Disc, which you can not go back and add additional video to, once you have burned it.
