As for the question about Field Order, since you don't tell us exactly what you were capturing and how you captured it, no one can say. If you captured from VHS or an analogue source (which I assume you did from your comment about digitizing it), if you used a 'normal' analogue to digital capture device and captured, say, to DVD compliant mpeg-2, it would 'normally' use Upper Field First. As for the 'do not convert' box, if you either captured and edited in DVD compliant mpeg-2, or else used Share > Create Video File > DVD, and produced a DVD compliant mpeg-2 of your project, then you opened the burning module, ticking that box will mean that the burning module will not change the properties of the mpeg-2 when it is burned to disc. It is irrelevant, in that case, what the burning properties might be in the window which appears above that box. The burning module will use the mpeg-2's properties if they are indeed DVD compliant. And above all, the mpeg-2 will not be re-rendered in the burning process.
