Video Quality changes as I'm recording. Can't use Avi format

Hi, I'm sorta new to the whole video editing through a usb 2.0 cable with Easycap. The quality is good as i'm watching the video on VS, but as soon as i start recording, the quality goes down really low. I've tried fooling around with the settings and stuff, keeping in mind i'm not new to using settings. When i use the Avi version to record my video off my camcorder, it's better quality, but it skips once a while throughout the scences. I have a inspiron 1501 dell laptop,1gb ram, 1.80ghz processor amd x2 core,256mb ATI Radeon video card, so really i don't see really any reason why the quality would just shoot down. So, how do is there any way to fix the good quality going to poor quality when i'm recording, and is there anything i can do to not make it skip when i'm recording when i record in AVI format? If you want to use DV-AVI capture and your camcorder has an IEEE1394 port (firewire), forget about USB capture. If you are trying to capture to some other flavour of AVI, like DivX, Xvid, mpeg4 etc. you are pushing a string with an entry level capture device.
