I installed VS 10 Trial. I created some simple clips. I used "Create Disk" to build a simple disk. I used the DVD menu template. I noticed the Menu button provides preview for each clip. How I can change it not to preview?

Not sure I fully understand your problem.
But if you select the edit tab from the burner module, deselect Motion Menu
Your thumbnail will display the first frame.
If you double click the thumbnail in the preview screen you can set the thumbnail frame.
If you do not want a thumbnail, try using the Text Menus from the Gallery
