I am mainly watching my hd videos through computer to panasonic PTAX100 projector ( 720p hd projector that accepts interlaced signal) via hdmi interface.
What happens if I dont select deinterlace upon capturing (VS10) in term of resolution (better or not). As I undertand deinterlacing is better for movement artefact.
Will the HD capable readers (vlc or other ) send interlaced signal to the projector or will it convert to progressive anyway

You should always capture in the format that was originally recorded. HDV, from Sony HC1 or HC3, is recorded at 1440x1080 interlaced, upper Field First. You should also edit that format and when editing is complete, create a video file with the desired properties.
Your HD projector evidently has deinterlacing built in. If so, it may deinterlace better or worse then Video Studio... The only thing you can do is to create some test video of slow, steady pans (e.g., across the front of a building), something with strong vertical lines, that will clearly show interlace artifacts. Then create several video files of that same clip:
1) 1280x720i interlaced UFF
2) 1280x720p deinterlaced (Frame Based)
Then, to see if your projector has scaling build in:
3) 1440x1080i
4) 1920x1080i
5) 1920x1080p (this looks the best on my equipment. But, your mileage may vary...)
Then compare to see what you like best.
