Adam - sounds like dropped frames. Experiment with different settings and view the output or search here for recommended capture settings.
I have a Win XP sp1, Intel 1.6 GHZ, 1.5Gb RAM, ABit SD-533 MB, Leadtek TV Expert capturing to separate 120 GB dedicated video HD and have used optimizing for video capture guides for PC settings.
For me, capturing in 720x480 was "jerky" until I found the right setting through trial and error.
This is what worked for me, your mileage may vary. You can change the settings by clicking on the Advanced tab and selecting "Customize" (last selection) to access a menu that allows you to enter what you want rather than taking the program defaults.
