No. Capturing DV means you capture the audio using standard the PCM format. This can't be changed. However, in the editing phase, you choose either one of the templates which use 5.1 or make a custom one which uses it and your other desired properties, and then Share > Create Video File > DVD using those properties. That then produces a DVD-compatible file which has 5.1 audio as its format. Then in the burning module, you insert that file or files, make sure 'do not convert compliant mpeg files' is checked, and burn (preferably to an ISO image file or Video_TS DVD folder, to avoid any possible drink coasters).

Thanks Ken and all who responed it worked. My problem was operator error. Like Ken said, I was not chosing 5.1 in edit mode but was doing so only in DVD BURN mode. Once I picked 5.1 in EDIT mode , it worked during the Burn mode. Thanks again
I do however have a basic 5.1 question- UVS 10 + states it supports Dolby 5.1 . My camera records in STEREO mode, Does this mean ULEAD 10 PLUS is creating other four channels? I do have 7.1 Dennon system and will like to be able to do home movies with DOLBY 5.1 and listen in that fashion.
Thanks

Glad it worked.
As for you basic question, essentially yes. VS10+, when you set 5.1 as the audio format, will take a dual channel stereo original and in effect create four virtual new channels to make up the 5.1. That's if you are starting only with dual channel stereo and do nothing more. However, of course, you could also play around and add extra channels yourself e.g. sound effects which move between rear left and rear right speakers or front left, centre and front right; voiceovers coming essentially from front centre etc... A whole new world...
But like everything new, it takes a bit of experimentation to get it right...
