Question about some video filters

I am unclear about some of the filters to improve lighting and all. There is exposure, level, brightness, and enhance-lighting. I do not understand the difference/relationship of these, and whether they should be used together or just one. I find the ehance one does not seem to work well when the subject is dark, but the background is bright (such as people in snow).

Also, I am finding that the anti-shake feature seems to make the image grainy on my screen. But, I am unclear if that is just the preview mode and it is OK on the DVD (I will have to create a DVD to find out: but if anyone has advice, it would be useful).
