Customizing Menus in VS 10+

I have looked through many of the posts but don't seem to find my situation.

1- Is there a way to turn off the motion menu feature other than manually unchecking the box every time? I think it may have something to do with the original template I picked but now that I have customized the menu all I want to do is get rid of the motion thumbnails as a default. Twice now I have forgotten to uncheck the box, burned the DVD only to find I had neglected to shut off the motion.
2- Is there a blank template or do I need a different program. I would like to insert an extra box of text but I cannot seem to figure out how to. Also is there anyway to change the color of the higlighting curser... I like the feather but it is purple.... Am I beyong the menu creator that is with VS10+? What program do I need?

Sorry about the mix up in post I forgot I was not in VS 10. I will check out the tutorial, Thank you :oops:
