Have you inadvertently entered a value in the VS capture duration field and are therefore telling VS to stop capturing after a given amount of time?

If you are capturing direct to mpeg-2 format, it is normal for less powerful computers to stop every few minutes. This is because direct capture to mpeg-2 is very demanding and the computer may not be able to keep up with the digital signal being sent to it. A 'transfer buffer' is there to keep some of the signal but if it fills up, then the capture will stop until the buffer is emptied -- when it can start again.

It is better to capture in DV format, if you are not doing so, and then doing your editing in DV format, and only then going to Share > Create Video File > DVD to produce a DVD compatible mpeg-2 file.
